Peaches n' Cream Pie

Mmm! Made this last weekend with some of the fresh peaches Cliff and Shy brought us from Washington. Quick, easy and yummy. (ok, only quick and easy when you use Pillsbury piecrusts. All you have to do is.....unroll. Shhhh, don't tell Mom!) I will probably add a little cinnamon and cloves to the peaches when I make this next time.

1 unbaked pie crust
3/4 c sour cream
1/2 c sugar
1/3 c flour
1/2 tsp vanilla
4 cups sliced frozen or fresh peaches
1/4 c brown sugar

Mix sour cream, sugar, flour and vanilla. Sprinkle 1 tbs of flour in the bottom of the pie crust to prevent sogginess. Put half the peaches in the bottom of the crust, followed by a layer of half of the sour cream mixture. Repeat layer. Bake at 425 for 20 minutes. Reduce heat to 350 and bake for an additional 35 minutes. Remove from oven and sprinkle with brown sugar. Broil 2-3 minutes just until sugar caramelizes.

*Note* Do NOT leave while broiling the sugar. It WILL burn. And it really tastes nasty and makes the whole house stink!

Sounds good! I'll have to try it sometime when I have someone to share it with who likes peaches.

Sounds YUMMY. I'll have to try it for your dad and share because we can't eat it all and don't "need" it either. Thank You for the recipe. Your brothers really don't know what they are missing out on do they!
